NUTRITION PRINCIPLE #3 – Animal foods are important for vibrant health.  A lack of adequate nutrients in the foods you eat is one of the ways you can be starving your body of what it needs.  Animal foods are an excellent source of protein and fat, vitamins and minerals, and many other nutrients that are not listed on a food label.  One pound of meat provides 100 grams of protein.  It takes 7 cups of beans to provide the same amount, and it is of a poor quality when it comes to the body’s ability to use it.

It is best to eat animal foods from healthy animals.  This means animals that are living as nature intended, such as cows eating grass, chickens eating greens and bugs, and wild caught fish.  But it is better to eat any whole, real animals foods that you can get than to eat processed foods.

Most muscle meats are high in methionine, and are best balanced with bone broth that is high in glycine and proline.  This explains why traditional foods included sauces and gravies.  The tougher cuts of meat that benefit from long cooking times also contain a better balance of these amino acids.  A beef stew made with a chuck roast and home-made broth is an example.

Dairy products are also very nutritious animal foods.  Butter is one of the best fats you can eat.  All milk products should be full-fat and preferably raw.  Find a local person that has a cow or goat and will sell you some of the extra milk, and make your own yogurt or kefir.
