FRESNO, Calif. (KSEE) – Breakfast is the most important meal of the day, but sometimes an early morning classic is the perfect late-night.
Bellas Mini Pancakes are a major favorite with food truck lovers in the Central Valley. The Franquez family began cooking mini pancakes hot off the griddle in 2021.
“When I was younger my mom would always make pancakes at home. And I would always add Nutella and Jericalla to it. But no bananas, just strawberries. And then I thought I would just add strawberries and bananas here,” said Aurelia Franquez of Bellas Mini Pancakes.
Franquez is one of the masterminds behind this breakfast classic. While she focuses on the toppings, her stepdad usually pours the batter on the griddle, and her mother runs the register.
You can’t miss their bright pink food truck at Shields and West Avenues in Fresno.

“We try to keep it simple, but we do have a lot of toppings to choose. We have 20 toppings to choose from… yeah, it’s a lot. (laughs),” she said. Foodies prepare for a sweetness overload when ordering the number one on the menu.
That order is covered with fresh strawberries and bananas drizzled over Nutella and a Mexican Caramel.
“That is our most popular. Everyone loves that one. Whenever somebody comes here, they go hey what is your most popular? We give them that one. Thought I would just add strawberries and bananas here,” said Franquez.
The food truck is mainly open during the evening. While adults stick with the classics, children add all the fixins’.
“And for kids we have gummy worms, Oreos, M&M’s, and whipped cream. That’s what the kids go for,” she said.
No matter what a person’s age, Bellas Mini Pancakes desserts are becoming a favorite with more customers.
