Local Bites: Grandma's Tacos in Fresno

FRESNO, Calif. (KSEE) – A tiny taco shop in northeast Fresno is cooking dishes with big flavors.

“Mostly Mexican food, burritos, tacos,” said Otilio Gonzalez, co-owner and chef of Grandma’s Tacos.

The restaurant is named after his wife, Gloria Gonzalez, also known as Grandma.

Otilio has forty years of experience. Since 2018, the couple has been in the taco business at the corner of Barstow and First, where great customer service is a priority.

“You do the best. You can do it for the customer. So that’s why I make everything with love. I like it,” said Gonzalez.

Customers love their breakfast burritos. Otilio cooks them by the dozens each morning. Each one is wrapped in a giant tortilla, loaded with potatoes with scrambled eggs. Customers have the option of bacon, ham or chorizo.

“I think the longest we take maybe is about five minutes, and that is with the breakfast burritos. Because potatoes are what takes the longest. But he has his little routine of how to precook the potatoes in the oil,” said Vanessa Gonzalez.

She is the granddaughter of Otilio and Gloria, plus an employee of Grandma’s Tacos.

From time to time, Vanessa helps with orders as the acting sous-chef.

While potatoes are the main ingredient for breakfast burritos, salsa is key for lunchtime tacos. When asked if their salsa recipe is top secret, Otilio responded, “That’s grandma’s recipe. No. It’s not a big deal. It is just tomatoes, chili, and garlic salt.”

From asada to barbacoa, tacos are loaded with lettuce, onions, and cilantro.

“But the flavors with the tacos are inside. Inside the tacos. Without salsa, tacos are not tacos,” said Otilio.

Thanks to Granddaughter Vanessa, Grandma’s Tacos is joining in on the Quesabirria craze.

She had the taste of melted cheese, served in a crispy, chili-stained corn tortilla with a side of broth at another taco stand.

“You guys kind of have everything already there. They had barbacoa meat here. So, I was like you should add that to the menu,” she said.
